The Key lime is a citrus hybrid (C. micrantha x C. medica) with a spherical fruit, 2.5–5 cm (1–2 in) in diameter, that is yellow when ripe but usually picked green commercially.
It is smaller and seedier, with a higher acidity, a stronger aroma, and a thinner rind, than that of the Persian lime (Citrus × latifolia). It is valued for its unique flavour compared to other limes. The name is derived from its association with the Florida Keys, where it is best known as the flavouring ingredient in Key lime pie. It is also known as West Indian lime, bartender’s lime, Omani lime, or Mexican lime, the last classified as a distinct race with a thicker skin and darker green colour. Philippine varieties have various names, including dayap and bilolo.

    Also known as
    Jeruk Nipis, Citrus aurantiifolia

    Origin
    St Lucia.

    Preparation
    Wash first.
The key limes are ready to use. Slice in half and squeeze by hand to extract the juice or grate the zest.

    Usage
The juice of key limes is predominantly used in cocktails and also mixed with water to make a simple and healthy lime drink.
Key limes are a staple ingredient of the key lime pie, though they are also used in many other dessert recipes as well.

    Storage
Refrigerate in a sealed container to keep fresh for longer.
Key limes freeze well and can be kept for months once frozen.
